Spicy-Cabbage-SlawPicnic for Four


Ingredients for a perfect picnic: a blanket, a beautiful spot on which to set it, a basket filled with these anything-but-ordinary sandwiches and sides, a bottle of wine, a bowl of fresh berries, and your best friends.

Black Forest Ham, Brie, and Fig SandwichBlack-Forest-Ham

Makes 4 sandwiches

4 crusty artisan rolls
1⁄2 cup fig butter
1⁄2 pound black forest ham, thinly sliced
1 ounce light brie


Slice the rolls and spread 2 tablespoons of fig butter on one side of each roll. Layer with ¼ of the ham. Spread ¼ of the Brie on the other half of each roll and close the sandwiches with the tops of the rolls.

Fennel, Jicama, and Radish SlawFennel


Serves 4

1 fennel bulb, thinly sliced
2 cups jicama, julienned
1 bunch radishes, stemmed and thinly sliced
2 tablespoons olive oil
11⁄2 tablespoons white balsamic vinegar
Salt and pepper to taste


Combine the first three ingredients in a medium bowl. In a small bowl, whisk together the oil and vinegar to make a dressing. Toss the vegetables in the dressing just before serving and season with salt and pepper to taste.

Easy-CapreseEasy Caprese Sandwich

Makes 4 sandwiches

4 ciabatta rolls
1⁄2 cup basil pesto
1 cup kalamata olives, sliced
2 cups arugula
1 medium red onion, thinly sliced
8 ounces of fresh mozzarella cheese
2 large heirloom tomatoes,sliced
Salt and pepper to taste


Slice the rolls and spread 2 tablespoons of basil pesto on one side of each roll, then cover with 1⁄4 cup of the kalamata olives. Divide the arugula, onion, mozzarella,and tomatoes and layer it on one half of each of the four rolls. Season to taste with the salt and pepper and close each sandwich with the other side of the roll.
