Recipes From Hot Toddies

Hot Tea Toddy
A variation of the classic Hot Toddy (see book for the recipe), this comforting drink is especially good if you think you are coming down with a cold. Use decaffeinated tea for a relaxing bedtime drink.
2 cups freshly brewed hot tea
4 tablespoons cognac
4 tablespoons dark rum
4 thin strips of lemon zest
2-3 teaspoons clear honey, to taste
2 lemon slices, to serve
2 cinnamon sticks, to serve (optional)
Put the tea, cognac, rum, lemon zest, cloves, and honey in a saucepan and gently heat for 5 minutes without boiling.
Remove the pan from the heat, let the mixture infuse for 5 minutes. Strain into 2 cups or heatproof glasses and serve immediately with a slice of lemon in each one and a cinnamon stick, if liked.
